Egg and Veggie Muffin: A Wholesome Breakfast Option

Ingredients

1 cup chopped mushroom 1 cup chopped broccoli 1 cup peppers 1 cup spinach 1 tsp oil 10 eggs ¼ cup milk ½ tsp black pepper Salt to taste ½ tsp dry mustard powder 3 tbsp minced onion 1 cup cheddar cheese ¼ cup parmesan cheese

Step 1

Start by chopping the vegetables. Cook the chopped veggies in 1 tsp of oil until tender crisp. 

Step 2

Meanwhile, preheat an oven to 350-degree Celsius and apply cooking spray on the muffin tin.

Step 3

In every muffin mould, equally divide veggies, onions and cheese. 

Step 4

Take a large bowl and add eggs. Add little milk, seasonings and mix well.

Step 5

Pour the egg mixture in each muffin mould and bake it for 20 to 22 minutes.

Step 6

When done, take the muffins out and let them cool. Serve fresh.
