Poha is a staple Indian breakfast, particularly in states such as Madhya Pradesh, Maharashtra, and Gujarat. This version of poha incorporates veggies in it to boost its fibre content and flavour. Here's a recipe for you to try:
2 cups thick poha 1 medium onion 1 medium potato 1 small carrot 1/4 cup peas (fresh or frozen) 2-3 green chillies 1/2 tsp mustard seeds 1/2 tsp cumin seeds 8-10 curry leaves 1/4 tsp turmeric powder Salt to taste 2 tbsp oil 1 tbsp lemon juice Fresh coriander leaves Optional: roasted peanuts, grated coconut
Rinse poha in a colander under running water until soft. Drain and set aside.
Heat oil in a pan. Add mustard seeds, cumin seeds, and curry leaves.
Once they splutter, add onions and green chillies. Sauté until onions are translucent. Add potatoes, carrots, and peas. Cook until vegetables are tender.
Add turmeric powder and salt. Mix well. Add the drained poha and stir gently to combine. Cook for 2-3 minutes on low heat.
Add lemon juice and mix. Garnish with fresh coriander leaves, peanuts, and grated coconut if using.
