Easy-To-Make Summer Potato Salad For A Light Meal

The perfect dish for a light meal. This refreshing potato salad is the perfect summer meal that will keep your stomach full. The creamy dressing makes it more delicious. Here is how to make it:

Ingredients

2 red potatoes 1 teaspoon salt, 2 ears corn 1 teaspoon mustard 3 teaspoons pickle juice 1 red bell pepper 1 cup mayonnaise ½ teaspoon paprika 1 teaspoon freshly ground black pepper ½ cup celery ⅓ cup dill pickles ¼ cup red onion ⅓ cup green onions 2 teaspoons dill 2 teaspoons fresh chives, for garnish

Step 1

Place the potatoes in a large pot to boil

Step 2

Add salt and the corn. Simmer for 10-15 minutes. 

Step 3

Transfer the potatoes to a large bowl. 

Step 4

Combine pickle juice with mustard and pour it over the still-warm potatoes. 

Step 5

Toss to coat. Refrigerate for at least 30 minutes, or up to 60 minutes.

Step 6

Dice the red bell pepper, removing the ribs and seeds.

Step 7

Combine the mayonnaise, pickle juice, paprika, salt, and black pepper. Mix it well.

Step 8

Add the bell pepper, corn, celery, pickles, red onion, green onions, and dill to the bowl with the potatoes. 

Step 9

Pour the sauce over and toss to coat. 

Step 10

Garnish the potato salad with chopped chives, then serve.
