Straight from the streets of Afghanistan, infused with aromatic flavours. This Afghani anda curry is a must-try. In just a few steps you can make this delicious dish at home:
4 eggs 2 tsp vegetable oil 1 onion Tomato puree 2 cloves garlic 1 tsp ginger paste 1 tsp cumin powder 1 tsp coriander powder 1/2 tsp turmeric powder 1/2 tsp red chilli powder (adjust to taste) Salt as per taste 1/2 cup plain yogurt Cilantro leaves
Hard boil the eggs, peel them and set them aside.
Heat oil in a pan over medium heat. Add chopped onions and saute.
Add minced garlic and ginger paste, and cook for another minute until fragrant.
Stir in tomato puree and cook until the oil separates from the mixture.
Add cumin powder, coriander powder, turmeric powder, red chilli powder, and salt.
Whisk yoghurt until smooth and add it to the pan. Stir continuously to avoid curdling.
Once the sauce thickens, gently add the boiled eggs to the mixture.
Garnish with fresh cilantro leaves and serve hot with rice or naan.
