This stuffed tomato recipe is incredibly filling and easy to prepare while being packed with different flavours that will delight your taste buds. Made with staple pantry ingredients, this is a must-try recipe.
6 large tomatoes 1 cup cooked quinoa (or rice) 1/2 cup feta cheese (crumbled) 1/4 cup chopped parsley 1/4 cup chopped basil 2 garlic cloves (minced) 1 small onion (chopped) 1 tbsp olive oil Salt and pepper to taste
Cut tops off tomatoes, and scoop out insides. Sauté onion and garlic in olive oil.
Mix quinoa, onion, garlic, tomato pulp, feta, herbs, salt, and pepper.
Stuff tomatoes with the mixture.
Bake at 375°F (190°C) for 20-25 minutes.
