Beetroot hummus is a vibrant twist on the classic dip. It's easy to make, nutritious, and adds a pop of colour to any table. Here's how to prepare this delicious spread in a few simple steps.
Start by roasting or boiling 1-2 medium-sized beetroots until tender. Once cooked, peel and roughly chop them.
In a blender or food processor, add the chopped beetroot, 1 can of chickpeas (drained), 2 tablespoons of tahini, 2 tablespoons of olive oil, 1 garlic clove, and the juice of 1 lemon.
Blend the mixture until smooth. If needed, add water or olive oil to achieve the desired consistency. Season with salt, pepper, and cumin to taste.
Garnish with olive oil and fresh herbs before serving. Enjoy with pita bread or vegetable sticks!
