Looking for a perfect Maharashtrayan-style sweet potato fry? Well, look no more. Here is the recipe for “Ratalyache Kaapa,” a traditional dish from Maharashtra:
2 large sweet potatoes 2 tsp rice flour 2 tsp semolina (rava) 1 tsp red chilli powder 1 tsp turmeric powder 1 tsp cumin powder 1 tsp coriander powder Salt as per taste 2 tsp oil for cooking Coriander leaves
Wash and peel the sweet potatoes. Cut them into thin, round slices.
Combine rice flour, salt, semolina, red chilli, turmeric, coriander, and cumin powder. Mix it well
Toss the sweet potato slices in the spice mix bowl and evenly coat each slice.
Heat the oil over medium heat.
Once heated, place the slices in the oil and let them fry for 2-3 minutes.
Once they turn golden brown, drain the oil and remove them.
Garnish them with coriander leaves and serve hot.
