With a crisp top and soft center, this basic yet buttery muffin recipe can be made at home to pair with your tea or coffee. Here's how you make it.
Ingredients - 2 cups AP flour, 100 g sugar, 2 tsp baking powder, ¾ cup milk, ½ cup butter, 2 eggs, and 2 tsp vanilla extract.
Melt the butter in a microwave and set it aside to cool. Preheat the oven to 170 degrees Celsius.
In a mixing bowl, add the flour, sugar, and baking powder and whisk them together.
In a separate bowl, add the milk, butter, vanilla, and eggs and beat them into a smooth mixture.
Add the wet ingredients to the dry and fold them together till no lumps remain.
Take your silicon muffin moulds and pour the batter evenly and near the top of each mould.
Place them on a sheet tray and bake for 20 minutes or until a toothpick comes out crumb-free when inserted in the center of a muffin.
Muffins are best served warm, so cool them for 10-12 minutes and then, dig in!
