Sweet fried bread made with mashed bananas, flour, and sugar is a specialty of Mangalore, Karnataka. Served with coconut chutney on the side, here are some easy steps to make this dish at home.

2 overripe bananas 2 cup maida or all-purpose flour 2 tbsp sugar ¼ cup yoghurt 1 tsp cumin seeds ¼ tsp baking soda ½ tsp salt ½ cup oil

In a mixing bowl add the overripe bananas and sugar and mash them with a fork till smooth. Add the yoghurt, cumin seeds, salt, and baking soda and mix them in.

Add flour to the wet ingredients and knead it till a dough forms. Grease the dough with ½ tsp oil and cover and let it ferment for 6-8 hours or overnight.

After the duration of fermentation, knead the dough lightly and make small dough balls. Heat the oil in a kadhai for deep frying.

With a generous dusting of flour, roll out the dough balls to the size of a poori and drop them in the hot oil.

Fry till the buns fluff up and turn brown on both sides. Serve them with homemade coconut chutney or enjoy them as is.
