A simple and nutritious breakfast dish, goli idlis are soft, steamed rice cakes that are tossed in tempered spices and served alongside a spicy chutney or a bowl of sambhar. Here's how to make it at home.
1½ cup rice flour, 1 tsp mustard seeds, 1 tsp urad dal, 1 tsp chana dal, ½ tsp hing, 2 tsp ghee, 2 green chillies, 3 dry red chillies, 1-inch piece of ginger (finely chopped), 3 sprigs of curry leaves, 2 tbsp coriander leaves (finely chopped), 1½ cups of water, ½ tsp salt, or as required.
Boil water in a pan, then add ½ tsp each of salt and ghee to it. Add the rice flour to the pan and mix well with the water.
Once the flour has absorbed the water up sufficiently, transfer the wet flour into the large mixing bowl. Once cool enough to handle, knead the moist flour to a smooth and soft dough.
Take a small amount of dough and roll it in between the palm of your hands in the shape of a ball.
Heat water in an idli steamer. Place the dough balls into the steamer plate and cook for 10 to 12 minutes.
Heat oil in a pan and add mustard seed, urad dal, and Bengal gram saute them till they start to splutter.
Add the hing, dry red chillies, green chillies, ginger, and curry leaves and saute them as well.
Add the steamed goli idlis to the tadka and mix well. Add the chopped fresh coriander leaves and cook for 3-4 more minutes, then serve hot.
