Smoky and char-grilled brinjal mashed with coriander, green chillies, onions, and spices make for a hearty side dish. Here's how to make it.
You'll need, a brinjal, 3 garlic cloves, 2 tbsp oil, 1 tsp jeera, 1 dried red chilli, 1-inch ginger, an onion, ½ tsp red chilli powder, ½ tsp coriander powder, a tomato, 1 tsp salt, ½ tsp garam masala, and 2 tbsp coriander leaves.

Take a large-sized brinjal and make 4 slits. Grease the baingan with oil as it helps to peel off the skin easily once roasting.
Roast the brinjal on gas stove flipping occasionally until the peel turns dark and it's completely cooked from inside.
Cool it before peeling the skin off. Mash the brinjal and keep aside.
In a pan, heat the oil and saute jeera, dry red chilli, ginger and garlic.

Add the onion and saute till it turns translucent.

Add in the tomato, and saute until they turn soft and mushy.
Add in roasted and mashed brinjal along with salt, chilli powder, coriander powder and saute till they turn aromatic.

Add the garam masala and fresh chopped coriander leaves and mix well.
