300 gm potatoes 1 tsp mustard seeds 1 tsp cumin seeds 1 tsp coriander powder 2 dry red chillies 2 green chillies ½ tsp turmeric powder 2 tbsp mustard oil 1 tsp Kashmiri red chilli powder Salt to taste Coriander leaves for garnish
Wash the potatoes and add them to a pressure cooker along with 2 cups of water and put it on high heat.
Cook for 2 whistles, then rest the potatoes and peel them once cooled.
Cut the potatoes into ½-inch cubes. Add the oil to a pan over medium-high heat.
Once the oil is hot, add mustard seeds, cumin seeds, dry red chillies, and green chillies, and saute for 30 seconds.
Add the cubed potatoes and mix well.
Add coriander powder, turmeric powder, Kashmiri red chilli powder, and salt, and stir everything together.
Reduce the heat to low and cover the pan with a lid and let the potatoes cook for 12-15 minutes
Garnish the potatoes with chopped fresh coriander leaves and serve hot.
