Spinach is extremely high in nutrients that provides immunity and warmth to the body during winter. Here is an easy spinach soup recipe to relish this season.
2 cups chopped spinach, ½ cup milk, ½ tbsp corn flour, ½ tsp oil, ½ tsp butter, 1 tbsp chopped onion, 1/4-inch ginger, 1-2 cloves of Garlic, 1 cup water, 1/4 tsp sugar, salt & pepper to taste
Dissolve corn flour in milk and keep it aside. Heat oil and butter together in a saucepan, add chopped ginger and garlic and sauté for few seconds.
Add chopped onion and sauté until onion turn light pink. Then add spinach and let it cook until spinach wilts. Add a cup of water, sugar and salt and bring the mixture to boil.
Let it boil for 3 minutes. Turn off the flame and let the mixture cool for 5-10 minutes. Make smooth puree of the cooked mixture.
Transfer the mixture to the same pan after making the puree. Add dissolved cornstarch and stir continuously for 1 to 2 minutes over medium flame.
Add black pepper powder and let the mixture cook for 4-5 minutes. Serve it hot with bread croutons.
