Soups are the soul of the winter season and the spinach and potato soup is the perfect example. Made with fresh spinach and humble potatoes, this soup brings together two veggies in one creamy and satisfying dish. Here's a recipe for you to try.

2 tablespoons of ghee or oil 1 chopped onion 2 minced garlic cloves 3 diced potatoes 4 cups of chopped spinach 1 teaspoon of cumin powder 1 teaspoon of coriander powder 1/2 teaspoon turmeric powder Salt and pepper to taste 4 cups of vegetable broth Optional: fresh cilantro for garnish

Heat ghee or oil in a saucepan over medium heat. Sauté the onions and garlic until softened.

Cook for 2–3 minutes after adding the cubed potatoes.

Add cumin powder, coriander powder, turmeric powder, salt, and pepper to taste.

Cook until the spinach has wilted.

Pour in the vegetable stock, bring to a boil, and then reduce to low heat until the potatoes are cooked.

If necessary, adjust the seasoning. Garnish with fresh cilantro, if desired.
