Mango ginger, maa inji or mango inchi is a type of ginger that has a scent similar to that of mangoes. Apart from being a tangy pickle, maa inji also has many health benefits. Here’s an easy recipe to make the pickle at home.
Chopped mango ginger - 1 cup Lemon - 1 Red chilli powder - 2 teaspoons Turmeric powder - ¼ teaspoon Oil - 2 teaspoons Mustard seeds - ¼ teaspoon Asafoetida - ¼ teaspoon Salt as per taste
Rinse the mango ginger, peel its skin, grate it, and mix with red chilli powder, turmeric powder, and salt.
Heat some oil and add mustard seeds. When the seeds start to splutter, add asafoetida, mix it well and turn the heat off.
In the hot mixture, add the grated mango ginger and lemon juice and let it cool.
Transfer the maa inji pickle to an air-tight container and enjoy the sour and spicy flavours.
