Soups define the winter season and it is that time of the year when your body craves warm and comforting soups. The roasted pumpkin soup is one of those soups that keep your body warm during the chilly months of winter while also satisfying your appetite and soul.

1 peeled and cubed small pumpkin 1 chopped onion 2 minced garlic cloves 2 tablespoons olive oil 4 cups vegetable broth To taste, salt and pepper Optional: 1/2 teaspoon ground cumin, 1/4 teaspoon ground cinnamon

Preheat the oven to 400° F (200° C).

Toss the pumpkin, onion, and garlic with olive oil. Roast for 30-40 minutes, until soft.

Blend roasted veggies and vegetable broth until smooth.

Transfer to a saucepan and season with salt and pepper (optional cumin and cinnamon).

Simmer for 10–15 minutes.
