Easy Recipe To Make Aviyal

Try this South Indian delicacy prepared with wonderful amalgamation of subtle spices and herbs.

Ingredients

1 cup cucumber, 1 cup carrot, 1/2 cup pumpkin, 1/2 cup green unripe bananas, 3 cup water, 1/2 teaspoon powdered turmeric, 1/2 teaspoon red chilli powder, 1 cup coconut, 4 green chilli, 2 pinches cumin seeds, 1/2 cup curd, 2 tablespoon coconut oil, salt as required, 10 curry leaves

Step 1

Grind red pepper powder, coconut, green chillies, and cumin seeds into smooth paste along with 4-5 tsp water.

Step 2

Chop the vegetables in a large bowl.

Step 3

Boil the veggies in pan and after they are properly cooked add turmeric powder and salt.

Step 4

Now add the prepared masala mix.

Step 5

After the masala paste is completely observed toss the veggies with yogurt and cook for another minute. And garnish with curry leaves and serve.
