Enjoying winter with a cup of piping hot soup is not something new. However, having a whole new taste of soup made from Cauliflower is definitely something to add to the flavours. Take a shot at this recipe!
1 medium-head cauliflower (broken) into florets 1 medium carrot, shredded 1/4 cup chopped celery 1 cup shredded cheddar cheese 2-1/2 cups water 3 tablespoons all-purpose flour 3/4 teaspoon salt 2 teaspoons chicken bouillon 3 tablespoons butter 1/8 teaspoon pepper 2 cups of milk 1/2 to 1 teaspoon hot pepper sauce (optional)
In a pan put cauliflower, carrot, celery, water, and bouillon together and bring the mixture to a boil.
Cover the pan with a lid and bring the flame to a medium-low. Let the mixture simmer till the vegetables are tender.
Do not strain the water. Now in a large pan, melt the butter and pour flour, pepper, and salt until you get a smooth mixture.
At this stage, slowly start pouring in the milk and let the mix heat over medium flame. Bring it to a boil and stir till the soup is thickened.
Reduce the flame, and add cheese to the soup. Let the cheese melt and add pepper or hot sauce for a spicy touch. Combine this mixture with the vegetable mix and your deliciously hot soup is ready.
