Shahi paneer is the perfect addition to any party feast through which you can bring all the royal flavours together. This delightful vegetarian recipe combines soft paneer cubes in a velvety creamy gravy that's both mesmerising and satisfying.
250g paneer, cubed 2 medium onions, finely chopped 2 tomatoes, pureed 1/4 cup soaked cashews 1/4 cup fresh cream 2 tablespoons ghee or oil 1 teaspoon ginger-garlic paste 1/2 teaspoon turmeric powder 1 teaspoon red chilli powder 1 teaspoon garam masala 1 teaspoon coriander powder 1/2 teaspoon cumin seeds 1 bay leaf 2-3 green cardamom pods Salt to taste Fresh coriander leaves for garnish
Soak cashews in warm water for 15-20 minutes and blend them into a smooth paste. Puree tomatoes in a blender until smooth.
Heat oil in a pan and add cumin seeds, bay leaf, and green cardamom. Once fragrant, add chopped onions and saute until golden brown.
Add ginger-garlic paste and saute for 2 more minutes. Then add pureed tomatoes and cook until oil separates.
Add turmeric powder, red chilli powder, coriander powder, and salt. Mix it well and cook for 2-3 minutes.
Stir in cashew paste and mix well. Cook for 2 minutes then reduce the heat to add fresh cream. Combine thoroughly.
Gently add paneer cubes to the gravy and stir carefully. Sprinkle garam masala on the top and let it simmer for 5 minutes.
Remove bay leaves and serve the gravy with coriander garnish. Pair it with naan, roti or basmati rice.
