Easy Protein Rich Paneer Roastie For Perfect Evening Snack
Paneer Roastie is a delicious dish that looks like pancake but is much more than that. The dish features paneer, marinated in a blend of aromatic spices and herbs. It is often served with mint cutney or yogurt dip. The dish is rich in protein and is a good option for a rich breakfast. You can also have it as an evening snack along with a cup of tea. 1 cup sooji ½ cup curd ½ cup water Salt to taste ½ cup onion ½ cup mixed veggies 1 cup paneer 1 tsp black pepper 1 tsp oregano 1 tsp chilli flakes 1 packet of ENO 1 tbsp coriander for garnishing Oil for frying
Take a large bowl and add sooji, curd, water and salt to taste. Keep them aside for 10-15 minutes, allowing it to ferment.
Put a pan over medium flame and heat 1 tbsp of oil in it. After the oil is heated add the chopped onions.
Saute for a minute and add the veggies like grated carrot and finely chopped capsicum. Stir fry for a minute.
Add the oregano, chilli flakes and black pepper powder to the veggies. Adjust the salt now. Cook for few seconds.
Finally add the grated paneer to the vegetable mixture. Mix well and cook for a minute. Turn off the flame and let the mixture cool down.
In a non-stick pan, brush some oil. When the oil is hot enough, take a ladle full of the batter ad spread it like dosa.
Sprinkle some coriander leaves and cover the roastie and cook it in slow flame.
Turn it upside down and cook well. Once done serve it hot.
