Tomato rice, a South Indian favourite, combines tangy tomatoes with aromatic spices and rice, creating a flavourful and comforting meal. It’s easy to prepare and perfect for a quick, satisfying dish.
Gather one cup of basmati rice (cooked and cooled), two chopped tomatoes, one diced onion, a few curry leaves, and spices like mustard seeds, cumin seeds, turmeric, and red chilli powder.
In a pan, heat a tablespoon of oil, add half a teaspoon of mustard seeds, and let them splutter. Add cumin seeds, curry leaves, and a pinch of asafoetida (hing) for extra aroma.
Add diced onions and cook until golden brown. Then, add the tomatoes along with half a teaspoon each of turmeric and red chilli powder. Sauté until the tomatoes soften and release their juices.
Add the cooled rice to the pan and gently mix to coat the grains with the tomato mixture. Adjust salt to taste and cook on low heat for a few minutes to blend the flavours.
Garnish with fresh coriander leaves for a burst of colour and flavour. Serve your tomato rice with raita or papad for a complete meal.
