Paniyaram look like small idli balls but they are easier to make. Also referred to as appam, the dish is quite popular in South India and gaining the attention of foodies in the North. It is a healthy snack option that you can pair with evening coffee or tea. If you have leftover idli-dosa batter, here is how to prepare the batter for paniyaram.
2 cups leftover idli-dosa batter A pinch of asafoetida 1 teaspoon chopped ginger 4-6 curry leaves ½ cup chopped onions ⅓ cup grated coconut ½ teaspoon black pepper ¼ teaspoon red chilli powder 1 teaspoon chopped green chillies Salt to taste
To the leftover bowl of idli-dosa batter, add grated coconut and spices mentioned under the ingredients.
After mixing the spices, add the chopped vegetables and salt to taste. Keep the batter aside for another 5 minutes.
Add the consistency of the batter by adding water. Make sure that the consistency of the batter is neither too thick nor too runny.
Heat the paniyaram pan and grease the moulds with the ghee or oil of your choice.
Add a spoonful of batter in each mould and cook it with the lid on. After 5 minutes, flip paniyaram to cook the other side.
Serve paniyaram with coconut chutney, tomato chutney or sauce of your choice.
