Palak Dosa is a nutritious and delicious variation of the traditional dosa,. Incorporating spinach (palak) to make it even healthier.
1 cup rice 1/2 cup urad dal (split black gram) 1/4 tsp fenugreek seeds 1 cup spinach leaves 2-3 green chilies 1-inch piece of ginger 2 cloves of garlic
Wash the rice and urad dal together and soak them with fenugreek seeds in enough water overnight.
Drain the soaked rice and dal and grind to a smooth batter, adding water as needed. Transfer the batter to a large bowl, add salt, cover and let it ferment in a warm place for 8-12 hours.
In a blender, combine the spinach leaves, green chilies, ginger, and garlic and blend to a smooth puree.
Add the spinach puree to the fermented batter. Heat a non-stick tawa and sprinkle a few drops of water on it. If the water sizzles and evaporates, the tawa is ready.
Pour a ladleful of batter onto the centre of the tawa. Using the back of the ladle, spread the batter in a circular motion to form a thin dosa.
Drizzle a few drops of oil or ghee around the edges and on the centre of the dosa. Cook until the edges start to lift and the bottom turns golden brown.
