Khichdi is a comfort food for many people in India. This one-pot dish is wholesome, filling, and easy to prepare as it comes together quickly with just a few pantry staples. Adding palak to the mix is a flavourful and nutritious way to elevate your khichdi to the next level. So, here's a quick recipe that you can try for a quick meal fix.
1 cup rice 1/2 cup split yellow lentils (moong dal) 1 cup chopped spinach (palak) 1 onion, finely chopped 2 tomatoes, chopped 1 teaspoon ginger-garlic paste 1/2 teaspoon turmeric powder 1 teaspoon cumin seeds
1/2 teaspoon mustard seeds 2-3 cloves 2-3 whole black peppercorns 1 cinnamon stick 2-3 tablespoons ghee or oil Salt to taste Water as needed Fresh coriander leaves for garnish
Rinse and soak rice and lentils for 20-30 minutes.
Sauté onions, ginger-garlic paste, tomatoes, and spices in ghee/oil.
Add spinach, drained rice, lentils, turmeric, salt, and water.
Pressure cook for 3-4 whistles or simmer until fully cooked.
Garnish with coriander leaves and serve hot.
