Navratan korma is a luxurious dish made with a variety of ingredients in a thick, flavourful gravy. It is the ideal dish during celebrations and parties and is best served with roti, naan, paratha, or rice.
1 cup mixed veggies 1/4 cup paneer 2 tbsp oil/ghee 1 bay leaf 1-inch cinnamon stick 2-3 cardamom pods 2 cloves 1 tsp garam masala Salt
1 onion 1 tbsp ginger-garlic paste 1/4 cup tomato puree 1/4 cup cream 1/4 cup yoghurt 1/4 cup milk 1/4 cup cashews 2 tbsp poppy seeds (optional) 2 tbsp grated coconut (optional) 1 green chilli 2 tbsp mixed nuts (cashews, almonds, raisins) 2-3 pineapple cubes (optional) Fresh coriander (chopped)
Soak cashews and poppy seeds in warm water (15 mins), then grind with coconut, chilli, and water to a paste.
Boil or steam mixed veggies until tender.
Heat oil/ghee. Add bay leaf, cinnamon, cardamom, and cloves. Sauté onions until golden. Add ginger-garlic paste, then tomato puree and cook until oil separates. Add masala paste, and cook 3-4 mins. Lower heat, add cream, yoghurt, milk, and mix. Add veggies and paneer, cook 5-7 mins. Season with garam masala and salt.
Fry nuts in ghee until golden. Garnish korma with nuts, pineapple, and coriander.
