As everyone becomes aware of their health, many new variations of the traditional dishes have surfaced, including millet poha. Here, flattened rice (poha) is replaced with millet, which is naturally vegan and gluten-free. Here's a quick recipe for you to try:
1 cup millet (you can use foxtail millet, little millet, or any millet of your choice) 1/2 cup chopped vegetables 1 onion, chopped 1-2 green chillies, chopped 1/2 inch of grated ginger 1/2 teaspoon mustard seeds 1/2 teaspoon cumin seeds 8-10 curry leaves 1/4 teaspoon turmeric powder Salt to taste 2 tablespoons of oil Fresh coriander leaves for garnish Lemon wedges for serving (optional)
Soak millet for 15-20 minutes, then drain.
Heat oil; add mustard seeds, cumin seeds, and curry leaves. Then sauté onions, green chillies, and ginger.
Add vegetables, turmeric, salt, and soaked millet. Cook covered for 5-7 minutes.
Garnish with coriander leaves. Serve hot with lemon wedges.
