A Mexican Rice Bowl is a delicious and wholesome meal combining seasoned rice, beans, vegetables, and toppings, offering a burst of flavour in every bite.
1 cup of long-grain rice 1 can black beans, drained and rinsed 1 cup of corn kernels 1 red bell pepper, diced 1 cup cherry tomatoes, halved 2 tablespoons of olive oil 1 onion, chopped 2 cloves garlic, minced 1 teaspoon of cumin powder 1 teaspoon chilli powder Salt and pepper to taste Fresh coriander, chopped (for garnish) Lime wedges (for serving)
Rinse the rice under cold water. In a cooker, cook rice the way you want.
In a pan, heat olive oil. Add chopped onion and garlic, and sauté until translucent.
Stir in cumin powder and chilli powder. Cook for another minute until fragrant.
Add the cooked rice, black beans, corn, and diced bell pepper to the pan. Mix well to combine. Season with salt and pepper.
Divide the rice mixture into bowls. Top it with cherry tomatoes.
Garnish with freshly chopped coriander and serve with lime wedges on the side.
