Matka Kulfi is a traditional Indian frozen dessert made with milk and sugar and a variety of flavours. It is often served in small earthen pots called matkas. Here's a recipe to make this delicious treat, at home.
1 litre full-fat milk ½ cup sugar ½ tsp cardamom powder A pinch Saffron strands: A pinch (optional, soaked in 1 tablespoon of warm milk) ½ cup chopped nuts: 1/4 cup 1 tbsp Cornflour 2 tbsp milk Earthen pots (matkas)
Pour the milk into a heavy-bottomed pan and bring it to a boil. Reduce the heat to low and simmer, stirring frequently to prevent the milk from sticking to the bottom.
Continue to simmer until the milk for 45 minutes, till it reduces to about half its original volume.
Add sugar to the reduced milk and stir until it dissolves completely. Add the cardamom powder and saffron strands.
Mix the cornflour with 2 tbsp of milk to form a smooth paste and add this to the boiling milk. Continue to simmer for another 5-10 minutes, stirring continuously.
Add the chopped nuts to the milk mixture and mix well. Turn off the heat and allow the mixture to cool.
Pour it into the matkas. Place them in the freezer and allow them to freeze for at least 6-8 hours.
