Phirni is a traditional milk-based Indian dessert that is often confused with kheer, even though they are two different delicacies. This version of the phirni adds a refreshing mango twist, making it even more refreshing and flavourful.
1/4 cup basmati rice 4 cups of milk 1/2 cup sugar 1/4 teaspoon cardamom powder 1 cup of mango pulp Chopped nuts (almonds, pistachios) for garnish
Basmati rice should be soaked for thirty minutes, drained, and ground into a coarse paste.
After bringing the milk to a boil, whisk in the ground rice and continue cooking until it gets thick.
Cook until the sugar and cardamom powder are dissolved. Stir in the mango pulp after removing it from the heat and letting it cool slightly.
Transfer into dishes; top with chopped nuts; refrigerate to serve.
