Khari or khari puff, is a popular teatime accompaniment in India known for its savoury flavour and crispy texture. These biscuits are available in many bakeries and stores but making them at home is far more rewarding.
2 cups all-purpose flour 1/2 teaspoon salt 1 cup cold, unsalted butter 1/2 cup ice water 2 tablespoons of melted butter 1/2 teaspoon carom seeds 1/2 teaspoon black sesame seeds (optional) Salt, to taste
Mix flour and salt. Cut in the butter until crumbly. Add ice water gradually to form the dough. Chill for 30 minutes.
Roll the dough into a rectangle. Fold into thirds. Repeat rolling and folding 5–6 times. Chill for 30 minutes. Preheat the oven to 400°F (200°C).
Roll the dough to 1/4 inch thick. Cut into squares or rectangles.
Brush with melted butter. Sprinkle carom seeds, sesame seeds, and salt. Bake for 10–15 minutes, until golden.
Cool on a wire rack and enjoy with tea or coffee.
