Kanda batata poha is a traditional South Indian breakfast option that is now enjoyed across the country. It's the perfect quick fix, made with flattened rice, onion, potato, peanuts, and a blend of spices.
1.5 cups flattened rice 1 tablespoon oil 2 tablespoons roasted peanuts ½ teaspoon mustard seeds 10 curry leaves 1 onion 1 potato ¼ cup peas ¼ cup chopped tomato ½ teaspoon turmeric powder ¼ teaspoon red chilli powder Salt to taste Lemon juice for garnishing
Rinse the flattened rice till they soften a bit, and set them aside.
Heat some oil and saute mustard seeds, curry leaves, and chopped onion.
Mix in peas, chopped potato, tomatoes, turmeric powder, salt, and red chilli powder.
When the tomatoes are soft, add rinsed flattened rice and mix well.
Cook for about five minutes and garnish with roasted peanuts and lemon juice. Serve it hot.
