Easy Instant Rava Masala Appe For A South Indian Snack Time

Appe, also known as paddu or paniyaram are popular breakfast and snack foods across many states in South India. This easy recipe eliminates the need to ferment the batter, so you can enjoy appe whenever you want.

Ingredients

1 cup fine rava ½ cup plain yoghurt 2 tbsps grated carrots ½ tsp salt 1 tsp baking soda + 1 tsp lime juice 2 tbsps vegetable oil ½ tsp brown mustard seeds ½ tsp cumin seeds 1 tsp Bengal gram ¼ tsp hing 10-12 curry leaves 1 tsp finely chopped ginger 1 tsp finely chopped green chillies 1 dry red chilli (broken into small pieces) 4-5 whole cashew nuts

Step 1

Heat 2 tbsps of vegetable oil in a pan over medium-high heat and add mustard seeds, cumin seeds, and chana dal. Fry for about 5-6 seconds.

Step 2

Add hing, curry leaves, ginger, green chillies, dry red chilli, and whole cashew nuts. Fry until the cashew nuts turn slightly brown. Stir frequently.

Step 3

Reduce the heat and toast the rava, then let it cool and transfer the mixture to a large bowl.

Step 4

Mix yoghurt and grated carrots into the bowl with the rava then add ½ cup of water and mix well. Rest it for 15 mins

Step 5

Add 2-3 tbsps of water to the batter to achieve an idli-like consistency. Then add baking soda and lemon.

Step 6

Heat an appe pan over medium heat and add ¼ tsp of vegetable oil to each cavity.

Step 7

Using a spoon, pour the batter into each cavity and cook until the appe are browned on the bottom. Flip, and cook uncovered from the other side for 2-3 minutes.

Step 8

Remove the rava appe from the pan and serve hot.
