Popularly known as string hoppers, the idiyappam is a popular South Indian dish made with rice flour. Typically served for breakfast or dinner, it pairs well with coconut milk, spicy curries or sugar.
2 cups rice flour 1.5 cups hot water ½ teaspoon salt Oil, for greasing
Add the rice flour and salt to a mixing bowl and gradually pour in the hot water while mixing to form a soft dough.
Knead it gently for a few minutes until it becomes smooth and pliable.
Grease your idiyappam press with some oil before adding a portion of the soft dough into it.
Press the dough through the small holes onto greased idli plates or banana leaves in a circular motion.
Steam the idiyappam for about 8-10 minutes or until they are cooked through and firm to the touch. Serve hot.
