Also known as Irani dum chai, this historically rich chai is ingrained in the hearts of Hyderabadis. It is authentically Hyderabadi and a trip to this Nawabi city would be incomplete without a sip of this flavourful beverage. The tea is also quite popular in Bombay and Pune and is traditionally served hot with Osmania biscuits.
2 cups water 2 cups whole milk 2 tablespoons loose black tea leaves 2-3 tablespoons sugar 2-3 green cardamom pods 2-3 cloves 1 small cinnamon stick
First, bring a pot of water to a rolling boil and stir.
Add the cardamom, cloves, cinnamon, loose tea leaves, and a small amount of sugar.
After giving everything a thorough stir, boil everything for around five minutes.
Add the milk now, and let it simmer, stirring occasionally, for a further five to seven minutes.
Put a cover on the pan and boil the chai on low heat for an additional five to ten minutes.
After boiling for a while, drain off the spices and tea leaves. Transfer your hot Hyderabadi Dum Chai into glasses and savour the comforting aroma with Osmania biscuits.
