Mango Sago is a chilled dessert made with fresh sweet mango, chewy sago pearls, coconut milk, and simple syrup. The creamy, smooth pudding base pairs perfectly with the chunks of sweet mango and the chewy pearls. This easy-to-make dessert comes together quickly and is sure to be a crowd pleaser.
3 cups of coconut milk 1/2 cup of small sago pearls 1/3 cup white sugar 1/4 teaspoon salt 2 large, ripe mangoes, diced 1/4 cup sweetened condensed milk 1/4 cup of water
In a saucepan, combine the coconut milk, sago pearls, sugar and salt. Cook over medium heat, stirring frequently, until the pearls are translucent, about 15 minutes. Set aside to cool.
In a small bowl, mix condensed milk and water. Set aside.
To assemble, divide the sago mixture between 4-6 bowls. Top with diced mango.
Drizzle the condensed milk mixture over each bowl.
For best results, chill in the refrigerator for at least one hour before serving.
