Honey lemon curd is the perfect way to enjoy summer with its bright colour and flavour. It features a tart yet sweet taste and is sweetened using honey and making this at home is a straightforward process. Here's a recipe for you to try:
1/2 cup honey 1/2 cup fresh lemon juice Zest of 2 lemons 3 large eggs 1/2 cup unsalted butter, cut into pieces
Whisk honey, lemon juice, zest, and eggs in a heatproof bowl.
Place the bowl over simmering water (a double boiler).
Stir constantly until the mixture thickens (about 10–15 minutes). Take the bowl off the heat.
Stir in the butter pieces until melted and smooth. Strain the curd, cool it slightly, then refrigerate.
