Easy Homemade Vegetable Soup For Monsoon Immunity

To welcome the monsoon season, try this easy homemade vegetable soup to boost your immunity. Loaded with nutrients, this vegetable soup will keep you warm and healthy.

Ingredients

 1 large onion, chopped  2 carrots, diced  2 celery stalks, chopped  2 potatoes or sweet potatoes, diced  1 cup cabbage, shredded  1 cup frozen peas  2 tbsp tomato paste  2 tomatoes, chopped  3 garlic cloves, minced

Ingredients

1 tsp fennel seeds 2 bay leaves 1/2 tsp red pepper flakes 4 cups vegetable or chicken broth 1 tbsp apple cider vinegar or lemon juice Salt and pepper to taste 2 tbsp olive oil

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add chopped onions, carrots, and celery; sauté and stir in tomato paste and cook for 1-2 minutes.

Step 3

Add minced garlic, fennel seeds, salt, and pepper; cook for another minute.

Step 4

Pour in your preferred broth and bring to a boil. Add chopped tomatoes, diced potatoes, cabbage, and bay leaves.

Step 5

Reduce heat and let the soup simmer for about 20 minutes. Add frozen peas and cook for an additional 3-4 minutes.

Step 6

Stir in a dash of fresh lemon juice and serve.
