Cut mango pickle is a tangy, spicy, and flavourful Indian pickle made with raw mangoes, spices, and mustard oil. It is an instant pickle is a perfect condiment that perfectly pairs with paratha’s or any Indian meal, adding a delicious burst of tangy and spicy flavour to every bite.
2 cups raw mango (cubed) 2 tbsp mustard seeds (coarsely ground) 1 tbsp red chilli powder ½ tsp turmeric powder 1 tbsp salt (adjust as needed) ½ tsp hing 2 tbsp mustard oil (or any oil) ½ tsp fenugreek seeds ½ tsp sauf (optional)
Wash and dry the cubed mango pieces.
Take a bowl, mix mango with salt, turmeric, red chilli powder, mustard seeds, and hing.
Heat the mustard oil until smoky, then let it cool.
Pour oil over the mango mixture and mix it well.
Store the pickle in a clean jar and let it rest for 2-3 days, stirring it daily.
