Creamy Chicken Stew is rich and satisfying, perfect for cosy dinners. Tender chicken, fresh vegetables, and a creamy broth make this hearty dish a family favourite, ideal for any chilly evening.
600 gms chicken breast (cut into 1-inch pieces) 1 tsp Italian seasoning 1 tsp salt 1 tsp black pepper ½ tsp paprika 2 tbsp olive oil 2 tbsp salted butter 2 celery ribs (sliced) 2 large carrots (peeled, sliced) 1 white onion (diced)
3 garlic cloves (minced) 1 tsp dried thyme 1 tsp dried sage 1 tsp dried rosemary 1 cup white wine 4 potatoes (peeled, cut into 1-inch pieces) 6 cups low-sodium chicken broth 1 ½ cups heavy cream ⅓ cup all-purpose flour
Marinate the chicken with Italian seasoning, paprika, salt, and pepper for 15-30 minutes.
Heat olive oil in a pot, cook the marinated chicken until fully done, and set aside.
Melt butter in the pot, cook celery, carrots, and onion for 5 minutes until softened.
Add garlic, remaining salt and pepper, and cook for 1 minute until fragrant.
Deglaze with white wine, add potatoes and chicken broth and simmer for 15-20 minutes.
Stir in 1 cup of heavy cream, then mix flour with remaining cream and add to the stew.
Add the cooked chicken, bring to a boil, stir for 5 minutes until thickened, and serve hot.
