Indulge in rich, chocolatey muffins with a tender crumb that stays fresh for days. This easy recipe uses hot milk, a touch of coffee, and the right mix of ingredients to deliver moist, flavourful muffins every time.
3/4 cups plain flour 1/4 tsp baking soda 1/2 tsp salt 1/2 cup Dutch process cocoa powder, sifted 1 tbsp instant coffee granules, optional 3/4 cup full-fat milk, hot 1/2 cup canola oil 1 cup packed brown sugar 1 tsp vanilla extract 3/4 cup sour cream or thick plain yogurt 1 large egg 1 1/2 cups dark chocolate chips
Preheat oven to 210°C and line a 12-hole muffin tin with paper cases. Sift flour, baking soda, and salt into a large bowl.
In a separate bowl, whisk hot milk with sifted cocoa and coffee until smooth.
Add brown sugar, oil, egg, sour cream, and vanilla to the cocoa mixture and whisk until smooth.
Pour the wet mixture into the flour bowl and whisk until the batter is smooth. Fold in most of the chocolate chips, reserving some for topping.
Divide the batter into muffin cases, top with remaining chocolate chips, and bake.
