Go for a warm, flavourful baingan masala to keep the chills at bay this winter. You only need a few essential veggies and masala and about 20 minutes of prep time. So, don’t waste your time and get started!

1 large baingan, diced 2 large onions, finely chopped 2 tomatoes, pureed 1/2 cup yogurt 2 tablespoons ginger-garlic paste 2 green chilies, finely chopped 1 teaspoon cumin seeds 1 teaspoon turmeric powder 1 teaspoon red chili powder 1 teaspoon coriander powder 1 teaspoon garam masala

Wash the eggplant and dice it into cubes. Sprinkle some salt and let it sit for about 15 minutes. After 15 minutes, rinse the eggplant cubes and pat them dry

Heat oil in a pan and sauté the eggplant cubes until they are golden brown. Set aside. In the same pan, add cumin seeds and fennel seeds

Add chopped onions and green chilies to the pan. Sauté until become golden brown. Add ginger-garlic paste and sauté for another 2 minutes

Add turmeric powder, red chili powder, coriander powder, cumin powder, and garam masala. Mix well add the pureed tomatoes to the pan. Whisk the yogurt and add it gradually to the masala,

Add the sautéed eggplant cubes to the masala. Mix gently to coat the eggplant with the spices. Adjust salt according to taste.

Cover the pan and let the Baingan Masala simmer on low heat for about 10-15 minutes, allowing the flavours to meld. Serve hot
