A cosy meal of fresh winter green peas in soup form, punctuated with the flavours of mint for added freshness, is a surprisingly delicious combination. Make it on evenings when you need something light, silken and soothing, when it’s still cold outside.

2 cups green peas ¼ cup mint leaves 1 spring onion, chopped 3 garlic cloves, peeled 1 teaspoon Italian seasoning 1 stock cube 3.5 cups water 1 teaspoon red chilli flakes Salt and pepper, to taste

Blanch the peas and dunk them in a bowl of cold water to retain their bright green colour.

Strain and add to a blender along with the spring onion, garlic and chilli flakes.

Grind to a smooth paste, with the help of some water if needed and transfer back to a saucepan.

Add the water to dilute the ground mixture and set it on heat to bring to a simmer.

Season with the stock cube, salt and pepper while stirring at regular intervals.

Once thickened, turn off the heat and pour into serving bowls to enjoy warm.
