An unbelievably moist and decadent loaf, this ginger tea cake is the perfect sweet treat spiced with a hint of fresh and dried ginger. Swap the key ingredient with cinnamon or clove to make a spiced tea cake using this versatile recipe.
150 grams butter 100 ml honey 2 cups all-purpose flour 1 teaspoon baking powder 1 teaspoon cinnamon powder 1 tablespoon freshly grated ginger 1 teaspoon dry ginger powder 1 teaspoon baking soda 1 cup whole milk 1 egg ¾ cup + 1 tablespoon brown sugar 1 teaspoon salt
Combine the flour, baking powder, baking soda, cinnamon and dry ginger powder in a bowl.
Cream the butter and sugar in a separate bowl until fluffy before folding in the remaining ingredients.
Pour the dry mixture into the wet mixture to make a thick batter and transfer to a greased loaf tin.
Sprinkle the remaining tablespoon of brown sugar on top and bake in a preheated oven at 170°C for an hour until the top is bubbling and crisp.
Cool completely before slicing and serving.
