The winter season is here, and it’s time we make some changes and additions to our diet to embrace the weather and stay away from the seasonal illnesses that follow. This ginger soup, which packs a lot of goodness and flavour, will help you do just that. Here's a recipe to try:

1 tablespoon of olive oil 1 onion, finely chopped 2 cloves garlic, minced 1 tablespoon fresh ginger, grated 4 cups of vegetable or chicken broth 2 carrots, sliced 1 cup mushrooms, sliced 1 cup of spinach leaves Salt and pepper to taste

In a medium-sized pot, heat the olive oil. Sauté the chopped onion until it is transparent.

Stir in the minced garlic and grated ginger for about a minute, or until fragrant.

Simmer the mixture after adding the broth.

To the pot, add chopped carrots and mushrooms. Allow it to simmer for 10–15 minutes, or until the vegetables are soft.

Cook for an additional 2–3 minutes, or until the spinach leaves are wilted.

Season the soup to taste with salt and pepper.
