Garam masala is a mainstay of Indian cuisine and although you can get it from stores, making it at home allows you to use the freshest of ingredients. This way, you can ensure that you only use high-quality spices in your cooking.
1 tablespoon cloves 2 cinnamon sticks 6–8 green cardamom pods 1 tablespoon cumin seeds 2 tablespoons of coriander seeds 1/2 teaspoon grated nutmeg 1 dried bay leaf 1/2 teaspoon mace 1 tablespoon of black peppercorns
Roast spices (cloves, cinnamon, cardamom, cumin, coriander, and black pepper) until fragrant.
Cool the roasted spices completely. Grind the cooled spices into a fine powder.
Add grated nutmeg, bay leaf, and mace to the powder. Mix well to combine all the ingredients evenly.
Store in an airtight container for future use in Indian dishes.
