If you have a hankering for crispy on the outside, creamy on the inside, perfectly salted French Fries, then look no further. Here is a delightful French Fries recipe that will rival anything the fast food chains can offer, all from the comfort of your own home.
3 medium-sized or 2 large potatoes 3.5 cups cold water Oil for deep frying – as required ½ tsp fried rosemary, oregano or mixed herbs ½ tsp red chili powder or paprika Salt as required

Peel and slice potatoes into 1 cm thick sticks.
Rinse potato sticks in water to remove excess starch.
Soak potato sticks in cold water for 30-45 minutes.
Drain and thoroughly towel dry the soaked potatoes.
Heat oil to 135°C and fry potatoes for 3 minutes until lightly crusted.
Remove and cool the half-fried potatoes on paper towels.
Heat oil to 180°C and fry again until golden and crispy.
