Millets have received worldwide attention for their exceptional nutritional profile. Many people have started to add these superfoods to their diets, along with making smart substitutes. One such way is to make your favourite teatime snack, cookies, with kangni or foxtail millet for a different flavour and a healthy boost.

1 cup foxtail millet flour (kangni) 1/2 cup butter, softened 1/2 cup brown sugar 1 egg 1 teaspoon of vanilla extract 1/2 teaspoon baking soda Pinch of salt

Preheat the oven to 350°F, and prepare a baking sheet with parchment paper.

Cream butter and brown sugar until light and fluffy in a bowl.

Beat in the egg and vanilla extract until well combined. Whisk foxtail millet flour, baking soda, and salt in another bowl.

Gradually add the dry ingredients to the wet and mix until a dough forms. Drop spoonfuls onto the prepared sheet, spaced 2 inches apart.

Flatten each cookie slightly with a spoon or your fingers. Bake for 10–12 minutes, until the edges are golden brown.

Cool on the sheet briefly, then transfer to a wire rack. Serve the cooled cookies with your favourite tea. Enjoy the treat.
