3 long eggplants ½ tsp garlic powder Salt, to taste 2 tbsp olive oil For the filling: 2 cups feta cheese 1 cup spinach, cooked ½ tsp garlic, minced 1 tsp black pepper 1 tsp red chilli flakes Salt, to taste 2 tbsp dill, chopped 1 tbsp parsley, chopped Pomegranate seeds, for garnish

Wash and dry the eggplants, then slice into thin and long strips.

Add salt and garlic to the eggplant strips, then grill on a pan until golden brown and soft. Place the strips on a wooden board.

Meanwhile, place the feta cheese, spinach, pepper, chilli flakes, salt, dill and parsley in a large bowl.

Mix well, then add a spoonful of the feta cheese mix at the end of a cooked eggplant strip. Roll it up carefully.

Follow the same method with the remaining eggplants and transfer the rolls on a serving plate.
