Easy Egg Salad Recipe: Perfect For Mid-Day Cravings

Ingredients

1 tbsp olive oil 2 tsp lemon juice 4 boiled eggs 2 tbsp coriander(chopped) ½ jalapeno (diced) Pinch of black pepper Salt to taste

Step 1

Boil the eggs. When boiled, run them under cold water and peel them. Keep them aside. 

Step 2

Take a bowl and add the boiled chickpeas. Add jalapeno and coriander. 

Step 3

Add olive oil, black pepper, salt and lemon juice. Mix it well.

Step 4

Slice the boiled eggs and add it to the salad. 

Step 5

Toss everything well and serve!
