Vada pav is a popular Maharashtrian street snack that originated in Mumbai and is often known as the Indian burger. It is a simple food that is enhanced by various condiments and one of the traditional ones is the dry garlic chutney.
1/2 cup grated dry coconut 10–12 garlic cloves 2 tablespoons red chilli powder 1 teaspoon sesame seeds Salt to taste
Grated coconut should be dry-roasted in a skillet over medium heat until golden brown. Take it off and set it aside.
The garlic cloves should be dry-roasted in the same pan until they start to become golden. Roast the sesame seeds until they become fragrant.
In a blender, combine the toasted coconut, red chilli powder, garlic, sesame seeds, and salt. Continue until a coarse powder is achieved.
Keep the dried garlic chutney refrigerated in a sealed container. It stays fresh for several weeks.
